The hope of the old castle is a manchego cheese made with 100% pasteurized milk of manchega sheep. This cheese is produced by hand and traditional by the Esperanza de el Castillo family business, since 1952 and that received the denomination of origin Manchego in 1985.
The production of this cheese takes place in the town of Pulgar, located in the province of Toledo, and with more than 1,000 inhabitants is known for its high-quality cheeses marketed abroad. The quality of its pastures and native sheep, meet the characteristics necessary to obtain a raw materials improvements, and thereby the production of cheeses in the higher range.
It is in this same town of Pulgar, is where the hope of the old Castle cheese receives the healing process, which can vary between 9 and 12 months.
This elegant and fine cheese has a creamy and juicy texture that has led to the obtaining of the most prestigious awards.
